Somewhat *Less* Unhealthy

A recipe for dark chocolate chunk cookies

I love cookies.
Like really love them.
I will make or eat cookies at any time. In fact, because they're so portable, I love to make them to take with me places.
Or, I'll just eat straight cookie dough. I'm good with that too.
But I am obsessed with healthy living, and while I know I really should give up sugar and cookies and all that entirely, I can't. So, I play with "healthy" cookies.
Disclaimer: I would NOT call these a "health food". I do call these significantly healthier than the Chips Ahoy you can get off the shelves at the grocery store.
Dark Chocolate Chunk Cookies
2 cups whole wheat flour, preferably organic
1 cup coconut sugar, good luck finding anything other than organic
2 eggs
3/4 cup butter softened (1 and a half sticks)
1 tsp vanilla (I always use more than a standard recipe calls for)
1/4 tsp baking soda
1/2 cup chopped dark chocolate, or chocolate chips
To do these cookies the "right way", you should cream the butter, sugar and vanilla, then mix in the eggs, then add the flour and baking soda, and last the chocolate.
I didn't do that. I kinda just started throwing stuff in a bowl until it looked and tasted right. You can probably only use 1 stick of butter, if it's properly softened, but mine was still firm when I started mixing and nothing wanted to stick together, so I melted an additional 1/2 a stick and put that in to bring the whole thing together. 
I also have no idea how much chocolate I really used. I chopped up 3 squares, and that didn't look like enough, so I chopped up a couple more, and then ate some of that before mixing it in.
The point is: play with it, have fun. They're cookies: it's not rocket science!!
