10pm? Time for Cookies!!

Anatomy of a late(ish) night snack.

So yeah, I don't generally do more than one post a day, and I should save this post for tomorrow, but because I'm making cookies at 10pm, and now they're in the oven, and I already have a post planned for tomorrow (it's about the Oscars this Sunday).
So you get extra! Yay!!
I took the day off today. Not a normal thing, but I really needed it. And by "off" I mean I went to class, came home finished tomorrow's blog post (it's a really long one that I've been working on for two weeks), veg'd out in front of the TV for a couple hours, went and tutored some math (pythagorean theorem anyone?), and then came home and watched 5 more episodes of Sword Art Online (thanks for getting me addicted, Shaela).
Then I got the munchies. No, I'm not a stoner, and yes I had lunch, but I didn't really have dinner, so I was craving cookies. Of course I don't have any cookies or candy or other sweets in stock right now. (The chocolate I have right now is too dark to satisfy a sweet tooth, and too rich to eat more than one or two squares.)
So, I decided to use what I have and make something up.
Disclaimer: this is the first time I've just gone into cookie-making completely blind.
10pm Cookies (aka: Coconut Sugar Cookies)
  • 1/2 cup coconut sugar
  • 1 cup coconut flour
  • 2/3 stick of butter (that's all I had on hand)
  • 4 eggs
  • 1/2 tsp baking soda
  • pinch of salt
  • 1 tsp vanilla
  • Cinnamon
  • dark Chocolate chunks (optional - I only put it in the oven's second round)
I put the coconut sugar in my vitamin with the flour to grind it up a bit. Coconut sugar is pretty coarse, and I didn't want it to crystalize.
Then, I added everything else, and stirred until I got a dough that actually stuck together. That's why there's 4 eggs in this recipe, I kept having to add more just to get it to stick. (Who knew that coconut flour was so dry?) Rolled it into balls which were then flattened into discs and baked it all at 350 for somewhere around 25 minutes.
I made a total of 19 cookies that are about an inch and a half across. The first 12 were plain and the final 7 had chopped dark chocolate in them.  All are delicious!
Obviously, these are gluten free and can easily be paleo if you switch out the butter for coconut oil.
They're super tasty, although I think I'd add a full stick of butter next time. I just didn't have it on hand tonight. Gotta remember to add that to the shopping list.
